For my ninth Christmas cookie recipe, I picked these Apricot Pillow Cookies. This is another recipe which was on the complicated side and that my husband made. I am a lucky girl.
Our pillow cookies aren’t the same shape as shown in the recipe. Neither my husband nor I are skilled enough at rolling dough to get perfect square sheets when rolled. When we make dough it’s usually for pizza. I don’t even use dough for my quiche. I make a potato crust.

My husband didn’t substitute anything. We aren’t familiar enough with these kinds of pastries to be successful at improvising.
They are, by the way, delicious. And the dough is amazing. They are staying on the Christmas Cookie list for next year. But I think I want to try making them then.
